Couscous with Apricots and Mango

You may not have thought of having couscous for breakfast but it is a filling and delicious way to start the day. Dried apricots are a great source of iron while vitamin C-rich mango helps make sure you absorb the iron from these.

Ingredients

100g/3oz Couscous
250ml/8fl oz Semi-Skimmed or Soya or Rice milk
1 Split Vanilla bean
100g/3oz Chopped dried Apricots
1 Cubed fresh Mango

Method

Place the couscous and milk in a large pan and bring to boil. Scrape the seeds from the vanilla bean into the pan. Reduce heat and simmer for approx. 5 mins until couscous is soft. Drain, reserving the milk. Set the couscous aside. Place the apricots in the hot milk and leave to soak until they become plump. Put the couscous in bowls, add apricots, fresh mango and the vanilla milk. Serve hot or warm.
